Hey friends!

I have been totally slacking [again] for the last couple weeks so it’s time to catch up! Between working two jobs [12 days in a row, I might add!] getting bronchitis + a nasty respiratory infection, and having some gorgeous Colorado weather, I have been staying pretty busy since my last post!

The Denver area finally got some snow that seems to be sticking around. Let’s talk about this for a minute, because if you’re not from Denver,  you’re probably thinking, “She lives in COLORADO & they’re basically know for snow, winter, mountains, and skiing..” YEAH-That’s what I thought too! Before moving here, I had only visited parts of Colorado in the months of May & July, so the weather was warm, sunny, and wonderful. Little did I know that the Denver area we live in has extremely mild winters with only a handful of days of snow, ice, and freezing temperatures. We get close to 300 days of sunshine a year in Colorado, which means that even if we get an occasional snow storm, the sun usually melts it away pretty quick, which I LOVE. With that being said, my little suburb of Denver has looked like the inside of a shaken snow globe the last few days.  We started getting heavy snow over the weekend, which actually managed to close some business, churches, roads, and other activities to keep people off the roads and safe.

Prior to this weekend, we’ve actually had some record breaking days in January & February with temperatures all the way into the mid 60’s and 70’s which means Drew & I spent every second outside exploring!

SIDENOTE: I have been loving my newest purchases from Mile High Clothing Company. I randomly found this local Colorado company online and have been SO happy with the items I received.  I bought two tee’s, a sticker, and a coozie, [pictured below] all which are super soft & comfortable. I’ve said it before and I will say it as long as I am living in Colorado.. I am SO thankful to reside in a place that lets me get out and enjoy all the beauty that surrounds me, even through the middle of the winter, with my most favorite person in the world by my side.  Thank you God for blessing me with the most amazing journey through this crazy life!

Thankful Tuesday

Yesterday I was inspired by my lovely future sister-to-be, Amanda, from Talk Pray Shop and her positive outlook on your typical “case of the Mondays.” I will be the first to admit that I am not the biggest fan of Mondays, mainly because it means I have five long days of work, sometimes more, until I get to enjoy some free time on my weekends off. Granted, I have had every Monday off in January, it’s still a busy day for me catching up on cleaning, laundry, errands, and all the other tasks I managed to put off throughout the last week. It is SO easy for me to settle into a daily, weekly, and monthly routine, that I tend to dread what’s to come in the week ahead, starting with my Mondays. Instead of focusing on the 168 hours I have in the week to turn it into something AMAZING, I find myself counting down the minutes until I have some free time off to partake in some of my favorite activities. {Darn it, Colordao, I blame your beautiful state for this!} BUT, after reading Amanda’s blog, I was inspired to take this week on with a different and much more positive outlook, it was exactly how I needed to start my Monday. Instead of focusing on everything I typically dread, {Goodness, I sound like such a Negative Nancy!} I am more encouraged to take this week on with a POSITIVE attitude, starting by focusing on the blessings in my life & the things that I am the most thankful for, because after all, there are SOO many.

So, this week, I am thankful for {in no particular order & just to name a few}:

  • Having two jobs that I enjoy so much; even though that means I have less free/personal time. Working as a retail sales associate at Crazy Scrubs, I get to meet so many people that work in the health care industry. My job is to help them find clothes that make them look & feel amazing and confident in their professions.  I truly believe that when you feel confident & comfortable, starting with your appearance, it will radiate to everyone you encounter throughout the day. I love that I have a job helping people that literally care for others as their job, find something as simple as a scrub outfit, so that no matter what body type or physique they might have, they’re going to feel & look amazing and pass that confidence & poise onto the people they encounter & care for.  I am blessed to be able to assist them with the task of finding outfits that help them excel at their jobs each & every day. I also have a very part-time job at Velo Bling, that I’ve recently started, where I help out at a small, husband & wife owned company, that recycles old bicycle parts into some great jewelry & accessories. I love having this job for not only an extra source of income, but also a job that is always different & fun occupying my free time. I have worked in the jewelry industry before and I am so glad I get to do this for fun now!
  • Having the BEST support system & family ever. Whether it’s having a heart to heart talk about our life & future with my dear husband, an hour+ {I AM chatty Cathy} therapy/chat/vent session with one of my mamas, or just a friendly text message to one of my brothers & sisters just to say “hey” & catch up, I am blessed by each and every one of them and their endless love, support, and impact they have in my life.  I am so grateful for each one of those relationships & the fact that I get to be their family member for life! Thank you. I love & appreciate you all SO much.
  • The GORGEOUS Colorado weather we’ve been having: Guys, it was 70 some degrees yesterday and as you all know, IT IS JANUARY. Is this real life!? It’s supposed to be just as nice today, [insert happy dance here] and despite some struggles, moving to Colorado is continuing to be one of the best decisions Drew & I have ever made.
  • This Sunday at LifeGate Church. Wow, first of all, I simply cannot remember the last time I laughed until I had tears in my eyes from a “preview” church service.  Pastor Nirup has an amazing gift from God, spreading His word with such an interesting perspective while making you laugh hysterically along the way. Drew & I have been fortunate enough to experience the first two preview service before they “officially” launch in February, and we cannot wait to see what God has planned for LifeGate’s future & outreach in the city of Denver. Welcome home, LifeGate Church! I am so excited to, “make Jesus famous & Heaven crowded” along side of you! Check them out HERE!
  • My fur baby kitties, Hobbes & Nala. Goodness, if you don’t know already, I am a crazy cat lady & proud.  I am madly in love with my two little bengal cat babes, Hobby & Nally. You will hear SO much more about them and their stories in the future. They are too cute for words, make me giggle for days, and can improve my mood within seconds. Just look how cute they are!!!

  • Nail polish. Ladies, you feel me here!? I cannot stand when my nails don’t have paint on them, and I get SO grossed out when I can see dirt under my nails {GAG}. So, like most women, I have an obsession with changing up my polish on a weekly basis, which means I have an extensive & always growing, nail polish addiction, with 70 plus polishes to choose from in my collection.. A girl can never have too many, right?!
  • Last & never least, my wonderful husband, Drew. I know I mentioned him earlier, but he is just too incredible, he deserves his own paragraph. [Sappy post, starting NOW] He is one of the smartest, sweetest, most handsome, and hardest working men I’ve ever known.  He is always providing for me and planning for the future, which I could never do without his help.  No matter the struggles we have, like most married couples, he always knows just how to make me happy & cheer me up when I need it the most. I do not have any idea where my life would be without his endless love and support. I cannot express enough how grateful I am to have him in my life. He is truly my greatest blessing & I am so thankful I get to fall in love with him each and every day for the rest of my life.

Friends, there is just no better way than to start your week with positive thoughts & actions, and continuing to follow through with them throughout your week.  Life is too short to live with regrets & dread the days to come. I strongly encourage you to be positive, amazing, thankful, and HAPPY in the weeks & days to come.  Strive to make someone’s day, encourage others, and continue to count your blessings.  I am sure nothing but good can come from doing all the above!

Saturday Breakfast: Biscuit Doughnuts

I don’t know about you but Saturday mornings are one of my favorites, especially when I am off work! I have never been much of a morning person, so I always loved the freedom to sleeeeep in on Saturdays. To me, there is just noting better than sleeping in and then starting my day off with a good breakfast. You will quickly learn that brunch is one of my FAVORTIE things in the world. You just cannot beat savory & sweet food, coffee, and mimosas. {drooooling}

OK, that brings me to this morning.  I woke up hungry, like always, and have been itching to try a recipe I’ve seen floating around the web for a while now to satisfy my sweet tooth.

Quick & Easy Biscuit Doughnuts

These doughnuts are quick, easy, and SO delicious.

All you need is:

1 can of refrigerator biscuits {I happened to have a can of flaky buttermilk biscuits in my fridge so I used those instead of the recommended homestyle biscuits}

Vegetable Oil for frying

Butter {Melted}

Cinnamon/Sugar Mixture or Powdered Sugar for the topping

Heat enough oil to cover the bottom of a large skillet {about half an inch} over medium to medium high heat.

Since I used flaky biscuits instead of homestyle, I flattened out all the biscuits on a cutting board with a rolling pin until they were about a quarter of an inch thick {don’t flatten them too much, you still want them to rise}

Once flattened, I used a small shot glass to punch out the center of the biscuit like this:

Test a small doughnut hole in the oil to make sure it is at temperature. {You want the oil to bubble around the edges of the dough} Continue frying doughnuts until one side is golden brown.

Once they golden brown on both sides, place cooked doughnuts on a paper towel lined plate or baking sheet to cool. I cooked these a little longer than golden brown, because the doughnut hole I tested still had a soft doughy center. They turned out PERFECT. A little crispy on the outside & soft & delicious on the inside.

I melted a few tablespoons of butter and brushed onto one side of the cooked doughnuts & then placed them in the cinnamon sugar mixture to cover both sides.

EAT & ENJOY while warm!

These were SO good and took less than a half hour to prep, cook, and devour completely. I was too excited to eat all of these that I didn’t even think to try other toppings, besides cinnamon/sugar.  I LOVE powdered sugar and glazed doughnuts, {Who am I kidding, I just love doughnuts!} so the next time I make these, I’ll be making a variety.

It’s going to be a GORGEOUS day in Denver with temperatures in the high 50’s, so the hubby & I are off to hike in the mountains and work off all these bad boys!  I hope you all have a beautiful Saturday, friends.

Biscuit Cinnamon/Sugar Doughnuts:

Prep Time: 5 Min Cook Time: 10-15 Min Serves: 3-4 per can

  • 1 can refridgerator biscuits (8-10 count)
  • Vegetable Oil for Frying (enough to cover bottom of frying pan about 1/2 in)
  • 2-4 Tbsp. Butter- melted
  • 1/2- 3/4 C. Sugar
  • 2 Tbsp. cinnamon

Directions:

  1. Heat oil in large skillet on Med-Med/High heat, about 5 min
  2. Cut out center of biscuit
  3. Mix cinnamon & sugar together in small bowl, set aside
  4. Melt Butter, Set aside
  5. Place dough in hot oil and cook until golden brown on one side
  6. Flip once, and cook until golden brown
  7. Transfer to paper towel lined plate or baking sheet
  8. Brush with melted butter
  9. Toss in Cinnamon/Sugar mixture
  10. Serve while warm and ENJOY!

Hey Friends, Happy Wednesday!

 I’d like to mix it up a bit today by featuring a great photography blog by my friend, Jessie, from Jessie Nichole Photography. She is an extremely talented photographer who has recently relocated from the great state of Indiana, to beautiful Denver, Colorado. I found out that Jessie & her husband Bryce [who I knew from High School Cross Country] would be relocating to the Denver area through some mutual friends and family. At that point, Drew and I hadn’t really met too many people in this area that we really connected with, and after our brother & sister in law got some amazing maternity pictures done by Jessie, I reached out to her via Facebook.  We really hit it off after we met in person and Drew & I have really enjoyed getting to know both Bryce & Jessie better through taco Tuesday’s, church, and some other fun get-together’s. It has been SO nice having people from the same area in Indiana with LOTS of mutual connections to get to know better in the Denver area. We are truly blessed by their friendship!

One of the first things I ever mentioned to Jessie was that I had been wanting pictures of Drew and I in Colorado and after seeing her work, I knew I would LOVE to be a client of hers. In fact, the first fall we were in Colorado, I looked into some photographers for a shoot of Drew & I since we had not had any done since our wedding, 2 years prior, and have keepsake pictures of us to remember our time here in Colorado. Due some conflicts, I never pursued any that I had found. I have to say thank goodness I didn’t follow up with anyone else, because Jessie not only captured Drew & I’s personalities perfectly, she also captured the true beauty of Colorado that still blows me away with every picture I look at.  We are SO thankful for Jessie and the pictures she captured of us.  I honestly will treasure these images near & dear to my heart forever, no matter where Drew and I end up!

Hello 2015!

Well folks, it’s that time of year where everyone is posting their resolutions and goals for the next 365 days so what the heck, I might as well join in [sort of] – 2014 was a great year for me that was full of travel, music, family, laughter, and love. Here’s a quick recap:

Jan/Feb: I left my job at the jewelry store to pursue a childhood dream of working with animals. Enjoyed visits from Drew’s parents & my dad. The newest addition to our family was born Feb. 21 {Nala May}

December:  Had a nice weekend with some more visitors from home, Drew’s dad & brother,  sadly celebrated another Christmas missing family, but a enjoyed a beautiful day in Colorado with my wonderful hubs & ended the year with one last concert for NYE: STS9

W O W, 2014 was amazing for Drew & I, and those were just some of the highlights!

With that being said, I am so excited for 2015 and all the adventures this year can bring. I really dislike saying that I’m going to make “resolutions” mainly because for me, those tend to get put on the back burner and frankly just forgotten about. No one should ever feel like a failure because you didn’t complete a list you made in the beginning of the year. Trust me, I have been there and done that for oh, about 20 years now..yikes. For me, there is always something that gets forgotten about or that I just give up on, and even though I am the one that made the list to begin with, I still tend to feel like I’ve failed myself. To me, it’s completely normal for a person to discover new change as it surfaces in your life, so why wait! If you believe a change needs to be made to better yourself or for the benefit of others, it doesn’t necessarily need to start with the New Year. I truly believe that as long as you’re living life the way that you want to live every day & in a way that God directs for you, you don’t need to make a list. In no ways am I knocking anyone who does make a list of resolutions, to each their own & by all means, good luck to you, I wish you all the best & success! With all that being said, I do have some things I am pursuing and improving personally throughout 2015:

  • I will strive to read more whether it is books, magazines, devotions, or online articles. Reading is something I’ve always enjoyed, but as I’ve gotten older, I lost some of the passion I used to have for this hobby which I’m hoping to work on in 2015. NOW ACCEPTING ALL GREAT BOOK RECOMMENDATIONS & GO! 
  • I WILL blog more. I WILL, I PROMISE. I love having this outlet to keep people connected & in sync with what is going on in my life as well as another way to communicate & express myself in a different form than talking, which I’m really good at.. Y’all will be reading more about me through Mile High Hoosier real soon! 🙂
  • I hope to craft more. For Christmas, I made some good old-fashioned homemade gifts from the heart, {new blog post coming soon} for my mama & my future sister-in-law [check Amanda’s blog talkprayshop.com] and realized again just how much I LOVE do it yourself crafts & creating something special for loved ones.
  • I have a major sweet tooth and have been finding myself craving all things sweet lately, therefore I am going outside of my classic cooking comfort zone and am going to try to bake more, obviously for my own benefit 😉

So there you have it, just to name a few. Some of these I will do well, and some I’m very sure, not so well, but that’s all part of the fun, and if I don’t do these things, that is okay too. I hope you all are able to accept the change God places in your life, and be okay with letting go of some of the things you may have failed at. You will know when the time is right, and when the necessary change needs to be made for yourself. Good luck to everyone with your goals and resolutions for the year to come. I hope 2015 brings you good health and lots of happiness. I am excited to share more crafts, recipes, and stories with you all this year, so keep checkin’ back on what’s new here at Mile High Hoosier & as always, thanks for reading!

Homesick

I am HOMESICK.

There, I said it..

It has been months since I’ve had these feelings, which is rather surprising for me. Before the big move to Colorado, I had never really ventured anywhere for an extended period of time, besides little things like camp & vacations. I stayed around home for school and work after high school, mainly because I felt safe & secure. After all it was the only place I had ever known.  When Drew and I really started taking about moving away from Indiana, I never had any doubtful feelings, mainly because I knew I would always have my number one security, my best friend and husband by my side to help me through anything God decides to send our way.

The first time I really felt homesick was within our first week of living in Colorado. A couple of days after we got settled into our new apartment, I got a phone call from my step dad Ed saying that my mom was being admitted into the hospital for an emergency appendix surgery. My healthy and active mama..I couldn’t wrap my head around the situation, and being eighteen hours away from her for the first major thing to ever go wrong was SO hard on me. I would have done anything to just get in my car and make the trip right back to where I came from, but I couldn’t.  The overwhelming sense of homesickness hit me like a brick wall, a feeling I had never felt before. Luckily with the help of modern technology and my amazing husband, I was able to keep up with my mama and the progress she was making.  Thankfully today, she is healthy, happy, and has made a full recovery.

In the last couple weeks since our trip home to Indiana, I have felt the feelings of homesickness all over again.  For some dumb reason, I didn’t realize that leaving a place that was once so familiar to me could make these feelings sweep over me again. As much as I loved being back ‘home’ in Colorado, my heart is aching for all the fun and exciting things I’ve been missing out on with my family and friends in Indiana, like weddings, babies, engagements, and get togethers.

It breaks my heart.

I wish there was a way to just close my eyes and teleport right back to Indiana whenever my heart desires, just so I don’t have to miss these things that I would do anything to be a part of.  I know moving 18 hours away from home has it’s benefits, but this is one of the major downsides that I just have to deal with.  In the last year, I have felt less and less like a part of things, like my group of friends & even my family and more & more like a stranger. I hate saying that, because I know that I am SO loved by so many, and for that I am SO grateful, but once you move, it is so easy to understand the meaning of ‘out of sight & out of mind.’  I have never felt more like the odd ball out in my own family and in my group of friends than I do now by missing out on so many important things that I could would have been a part of if I just lived back at home.  Again, WHY DOESN’T TELEPORTING EXIST!?!? We’ve been blessed with some new friends in Denver, and the company of an old friend moving to this beautiful state has is helping these feelings that I have dissipate, but there is just something about feeling completely connected with your loved ones that I have been missing more than words could explain.

I’m not writing this post for a pity party, or even sympathy for that matter. I have been beyond blessed by having this opportunity to grow spiritually, mentally, and emotionally with my husband in Colorado.  This experience has opened my eyes in so many ways, and I now truly know what it’s like to fully depend on my husband and his love & support, which has helped me and our relationship in numerous ways. I am so thankful to have my Drew, he somehow always knows what to do to bring me right back to reality and open my eyes to the wonderful blessings and experiences we’ve had in our lives and I know this feeling of homesickness is just a phase that will eventually pass. Tell your loved ones how you feel today & everyday, because you never know how much they need to hear it.

Indiana Recap

Hey all! Once again, I am majorly slacking at blogging! UGH but in good reason, we have been busy traveling and recovering from a whirlwind week long trip to Indiana!  After two of the longest weeks of my life, we finally made it back home to meet our precious nephew Jacoby Andrew

My life feels complete. I can’t begin to tell you how hard it was for me being 18 hours away from one of the most precious gifts to our family. It’s truly amazing how much love you can have for someone you’ve never even met & I honestly cannot comprehend how crazy in love I will be when it’s Drew and I’s turn to bring a little babe into this world!

This last week has been tough for me recovering from spending 30+ hours in a car, leaving friends, family & that adorable 6.5 pound bundle of joy, and getting back into our daily routines of our everyday life in Colorado. I miss everyone so much already and I am so thankful for the opportunity to go home and have a much needed week with some of my favorite people.

Drew and I were both so busy on our trip trying to spend as much time with every as we could, especially Coby.  I mastered the art of being a complete baby hog every chance I got and loved every second of it. I think he kinda liked it too 🙂

We had plans for just about every day & night that we were there and we had so much fun catching up with friends we haven’t seen in ages. It had been thirteen months since Drew was home last, so it was so good to see him back home in Indiana. The weather wasn’t the greatest, it was pretty chilly the whole time we were home, but we made it back just in time to see some of the gorgeous fall colors Indiana has to offer, one thing I have missed in Colorado. And here’s the one & only picture I have to show for it!

Friday night was one of my favorites. We got to watch our bro Eric Lee Carpenter’s album release concert at Ignition Garage and celebrate with friends and family after the show at Constant Springs. I was & still am SO blown away by Eric’s talent and how amazing it was watching him preform live. Eric’s EP, “A Good Place to Start” is  and is available NOW on iTunes & Spotify, so do yourselves a favor and download it today, you will not be disappointed! 

I am beyond thankful for safe travels and the time we spent with everyone. I was sad to see the time come and go so quickly, but once again, it has made me realize how special Indiana and the people there are to me. I’m already looking forward to the next time Drew & I will have the chance to visit again.
